Description
Among 1300 cooperative dairies in Denmark , Mano's is one of the smallest . Nevertheless , it is the island's main business undertaking and proceeds from the 44,100 pounds of butter produced yearly represent about one third of Mano's total income . Mano's dairy treats the milk production of 26 farms . Every morning starting at 8 am a horse drawn wagon makes three rounds of the farms picking up milk . As this come in, the dairy becomes a scene of frenzied activity . Manager Herluf Petersen and his wife , who works with him unload the cans , start the processing , sent out empty containers and measure out milk for delivery to customers . Butter making Is usually finished by noon . The dairy uses 210 barrels of diesel oil per year .
